Before Baking

  • ½ cup heavy cream, warmed

Cream Cheese Frosting

  • 8 ounces cream cheese, softened

  • ¼ cup salted butter, softened

  • 1¾ cups powdered sugar

  • 1 teaspoon vanilla bean paste (or pure vanilla extract)

Activate the Yeast

    If using instant yeast, you can skip this step and mix it directly into the dough.

    2. Prepare the Dough

    In a large bowl whisk together:

    • Bread flour

    • Salt

    Set aside.

    In the bowl of a stand mixer combine:

    • Activated yeast mixture

    • Remaining sugar

    • Greek yogurt (or sour cream)

    • Softened butter

    • Eggs

    • Vanilla bean paste

    Add the flour mixture.

    Mix on low speed for about 1 minute, just until combined.

    Allow the dough to rest for 5 minutes so the flour can fully hydrate.

    Increase the mixer to medium speed and knead for 5–7 minutes, until the dough is smooth, elastic, and begins pulling away from the sides of the bowl.

    If needed, add 1 tablespoon of flour at a time. The dough should remain slightly sticky but manageable.

    3. First Rise

    Transfer the dough to a lightly greased bowl.

    Cover and allow to rise in a warm place for 30–45 minutes.

    The dough should become puffy but does not need to double in size.

    4. Prepare the Filling

    While the dough rises, combine:

    • Softened butter

    • Brown sugar

    • Cinnamon

    • Vanilla bean paste

    Mix until smooth and well blended.

    Grease a 9 x 13-inch baking dish with butter.

    5. Shape the Rolls

    Turn the dough onto a lightly floured surface.

    For 8 large cinnamon rolls, roll into approximately a 16 x 15-inch rectangle.

    For 12 standard rolls, roll into approximately a 24 x 15-inch rectangle.

    Spread the cinnamon filling evenly over the dough, leaving just a small border around the edges.

    You can shape the rolls using either method:

    Method One (Recommended)

    Cut the dough into even strips and roll each strip individually into a tight spiral.

    Method Two

    Roll the dough into one large log and cut into 8 or 12 equal pieces using a sharp knife or unflavored dental floss.

    Arrange the rolls in the prepared baking dish.

    6. Second Rise

    Cover the pan and allow the rolls to proof for 25–30 minutes while the oven preheats to 350°F.

    The rolls should become noticeably puffy.

    7. Add the Secret Ingredient

    Warm the heavy cream in the microwave for about 15 seconds.

    Slowly pour it evenly over the proofed cinnamon rolls.

    This simple step creates incredibly soft, bakery-style cinnamon rolls.

    8. Bake

    For 8 Large Rolls

    Bake at 350°F for 22–24 minutes.

    Increase the oven temperature to 375°F and bake an additional 5–7 minutes, until golden brown.

    For 12 Standard Rolls

    Bake at 350°F for 20–22 minutes.

    Increase the oven temperature to 375°F and bake another 5–7 minutes, until beautifully golden and fully baked.

    9. Make the Frosting

    While the rolls bake, beat together:

    • Cream cheese

    • Softened butter

    until smooth.

    Add:

    • Powdered sugar

    • Vanilla bean paste

    Continue mixing until light, creamy, and silky smooth.

    10. Frost & Serve

    Allow the cinnamon rolls to cool for 10–15 minutes.

    Spread the cream cheese frosting generously over the warm rolls, allowing it to melt gently into every swirl.
