Ingredients

Pasta

  • 1 pound cavatappi pasta, cooked

Cheese

  • 16 ounces mozzarella cheese, freshly grated

  • 16 ounces Colby Jack cheese, freshly grated

  • 8 ounces sharp cheddar cheese, freshly grated

Seasoning

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

Cheese Sauce

  • 3 tablespoons butter

  • 3 tablespoons all-purpose flour

  • 1 (12-ounce) can Carnation evaporated milk

  • 2 cups heavy cream

  • 1 tablespoon Dijon mustard

Timeless Tip 🌿

Grate your own cheese whenever possible. Freshly grated cheese melts much more smoothly than pre-shredded cheese, which often contains anti-caking agents that can affect the texture of the sauce.

Instructions

1. Prepare the oven

Preheat the oven to 350°F.

Lightly grease a 9 × 13-inch baking dish.

2. Cook the pasta

Cook the cavatappi until just al dente according to the package directions.

Drain and set aside.

3. Prepare the cheese

Grate the cheese.

Combine all three cheeses in a large bowl.

Divide the cheese mixture evenly into two bowls.

One half will be folded into the sauce.

The other half will be layered throughout the casserole.

4. Mix the seasonings

Combine the garlic powder, smoked paprika, salt, and pepper.

Divide the seasoning mixture in half.

5. Make the cheese sauce

Melt the butter over medium heat.

Whisk in the flour and half of the seasoning mixture.

Cook for 3–5 minutes until the roux is smooth and lightly golden.

Slowly whisk in the evaporated milk until thickened.

Add the heavy cream and remaining seasoning mixture.

Whisk in the Dijon mustard.

Gradually add half of the shredded cheese, stirring constantly until silky smooth.

6. Combine

Fold the cooked cavatappi into the cheese sauce until every piece is coated.

7. Layer

Spread half of the pasta into the prepared baking dish.

Sprinkle with half of the reserved cheese.

Repeat with the remaining pasta and finish with the remaining cheese.

8. Bake

Bake for 25–30 minutes until bubbly.

Switch the oven to broil for about 2 minutes, just until the top becomes beautifully golden.

Watch carefully to prevent burning.

Serving Suggestions

Frequently Asked Questions

Can I make it ahead of time?

Yes. Assemble the casserole up to one day in advance, cover, refrigerate, and bake just before serving.

Why use cavatappi?

Its spiral shape captures more of the creamy cheese sauce than traditional elbow macaroni.

Can I substitute different cheeses?

Absolutely. Gruyère, Monterey Jack, Fontina, or smoked Gouda all work beautifully while still maintaining a rich, creamy texture.

Can I add a crunchy topping?

Yes. A light sprinkle of buttery panko breadcrumbs before baking adds wonderful texture if you enjoy a crisp topping.
